Gaeng wars: Bon Appétit’s kha-less tom kha gai

Tom kha gai is Thailand’s second-most famous soup after tom yam goong. The name means, literally, “galangal soup with chicken.” The galangal is the star ingredient: it gives this dish its memorable fragrance and signature appeal. That didn’t stop Bon Appétit from publishing a recipe that dropped galangal altogether. Criminals.
